My Menu Plan


Monday
I was home sick today and didn't feel up to much more than chopping veggies and throwing chicken breasts on the Foreman grill. our meal consisted of a Romaine and Spinach salad (with carrots, red and green peppers, red onion, cherry tomatoes, hard boiled eggs, honeycrisp apples and pears) with grilled chicken breasts. For dessert we had an almond pound cake topped with homemade strawberry jam.


Tuesday
Work all day, the piano lessons. We won't get home until around 6pm. We are going to have pre-prepared salisbury steak (from a marathon cooking session a few months ago) and some frozen veggies.

Wednesday
Ashley has confirmation and will be sharing a meal at the church with her class. Chistopher and I will probably have the left over chicken breasts on wheat buns with some pretzels and cheese dip.

Thursday
Nothing to do today other than work. We will have a wild rice meatloaf and roasted potatoes. The meatloaf was prepared during my last marathon cooking session and the potatoes will be yukon gold, russett and sweet potato mix.

Friday
Ashley and I are headed to Milwaukee to see the "So You Think You Can Dance" tour at the Bardley Center. We will either pack sandwiches to eat in the car or (more likely) run through a drive up window somewhere along the way.

Saturday
Farmers Market day! I hope to get some ground beef and ground pork from Jordandahl's Farm at the market, along with some green beans, corn, carrots, okra and tomatoes to make a goulash.

Sunday
Who knows? We may just have a frozen pizza and tossed salad.
